We accept payment by Cash (in person at our office here in Waipio Gentry), Check (business and/or personal), Cashier's Check, Money Order, and Credit Card (Visa, Master Card, American Express, and Discover). Please kindly note that we do require a signature for credit card payments.
Payments are due in full prior to the event. Depending on when an order is placed and the total amount due, we may also schedule a 50% payment.
The pre-set menus can be changed or substitutions can be made but it may change the price of the menu depending on current item costs. Please call or email us for a price quote.
We suggest using one of our many pre-set menus as a guide since it contains entrées, starches and salads -- adding/deleting items as necessary. When you're done creating your customized menu, call or email us so we can start on a price quote for you. If possible, please also provide us with the date of your special event, an estimated guest count, and the type of service (pick up, delivery, off-site) you're interested in.
The fish we're currently using is called swai. You may request a different fish (mahi, salmon, etc.) but the cost may be higher.
The sauce choices are: Lemon Caper, Tartar, and Wasabi Caper.
The dressing choices are: French, Italian, Oriental, Ranch, and Thousand Island.
Beverages are only included with the Legacy Ballroom menus. All other menus will be an additional charge. Please kindly note that there may also be a pick up fee for the cambros (containers used to transport the beverages).
We may also offer the Turkey Package on Christmas Day but won't have confirmation until Thanksgiving is over. Pick up would be at our kitchen here in Waipio Gentry.
The fancy finger desserts are bite-sized "petit fours" desserts. Because of its size, we may need to portion about 3-4 pieces per person. The assortment of flavors that are included: Brûlée Raspberry White Chocolate Cheese Bar, Toffee Crunch Blondie Bar, Turtle Brownie, and Luscious Lemon Squares. (Subject to change.)

We do not rent out catering equipment. Hawaii Tents & Events or Accel Party Rentals & Design are two catering equipment rental companies you may consider contacting.
The dimensions of the disposable pans are approximately 19 9/16" x 11 5/8" x 3 3/16" for the full-size deep pan and 19 9/16" x 11 5/8" x 2 3/16" for the full-size medium pan. There's also a half-size pan available.
The Nimitz Ballroom location is no longer open. For a town location, please consider the Pomaikai Ballrooms at Dole Cannery in Iwilei.
Dates can be reserved 14 months in advance. As an example, we start taking reservations for the entire month of June 2019 on April 1, 2018.

Garden wedding ceremonies without a reception at the Legacy Ballroom is limited to Monday through Thursday upon availability. Please call or email us for pricing.
The archway is approximately 8' high, 8' wide (columns are 1' and the opening is 6'). The pedestal columns are approximately 41" high (a little over 3') and 12" in diameter.
As the exclusive caterer for the ballroom, catering must come from A Catered Experience.
Although our main color is white, a request for color linen tablecloths can be made two weeks prior to the event date but there's no guarantee that we'll be able to acquire it.
We seat 10 guests per table.
The round tables are approximately 6' and the long tables are 8' x 30".
The chairs are approximately 3' high from the bottom up to the backrest, 16" across (backrest), and 17.5" across (seat).
The chairs are a shade of burgundy in color.
A bounce house can be brought inside of the ballroom (activities are not allowed outside of the ballroom) but it does take away space from the number of tables for your guests. Please call or email us to find out which bounce house companies are allowed in the ballroom.
The ballroom does not have projectors and/or sound equipment. We do offer a microphone podium which is the only item allowed to go through the house speakers.
The Legacy Ballroom and the Legacy I Ballroom have a retractable screen (approximately 11' x 14') that can be rented for $25.00 (plus service fee and tax). The Legacy II Ballroom has a portable screen (approximately 6' x 6') that can be used at no additional fee.
The flavors are: Chocolate, Vanilla, Chantilly, Dobash, Guava, Haupia, and Peach Bavarian.

The use of drones inside or outside of the ballroom requires a certificate of insurance. Please call or email us for more information.
